Dude , you have to fix the "engine light or sensor " BEFORE attempting to flash your new tune to the ECM .
call EOC for directions , but if I read right they only answer phone calls from local numbers , you may have to email them
and give them your phone number so they can call YOU .

If your error codes are related to sensors that were removed when you deleted the DPF and SCR , maybe they will go away after the necessary number of miles or start cycles, I would trust EOC IF they told you so .

I've got a tune from EOC on my 15 Ram Eco. First tune I got from them was a stage 1 with trans tune. I got this because I got a DEF Quality not met code no start in how ever many kms....

Funny , you say you have a 2015 , 2014 and 2015 do not have a DEF quality sensor in the DEF tank
.
stock tune also has the high idle when putting heather knob at full heat , 1200 RPM
GDE tune high idle $50 option kicks the high idle to 1400 RPM , don't know the RPM with Mr.Tuning high idle .
