Howdy everyone, recently purchased a 2014 ram ecodiesel and got a p0128 cel. I noticed my coolant temp is hanging around 177 to 185. It's that normal? From my research it's on the low side. I am thinking the thermostat is stuck open and might need to be replaced. Had anyone else had this issue? TIA

Welcome 
and yes I'd say your thermostat needs some attention, fairly easy job, one bolt is a little aggravating (passenger side) and is a little tight, a 1/4" drive universal or swivel socket helps a bunch, and they are proud of the factory thermostat (BOHICA)
I think the factory thermostat is 208* mine is typically 198~203

it is a little tight and awkward
but i had already done some tuning and exhaust work on mine so this was a piece of cake -
